4 large eggplants
1 medium size onion
Garlic to taste
1 cup oil
1 pound fresh tomatoes
6 walnuts
Fresh parsley
Salt
1 cup soup stock
Preparation
while skin is on, cut the aubergine into slices across forming circles. Dust with salt and leave for 10 minutes. Put down in oil and cook, then set aside. Pull off and dice the garlic and onion and fry. Add in chopped, skinned tomatoes. When onions, garlic, and tomatoes are baked add the fried aubergine, soup stock and parsley . to change into powder, grind in processor, then put in to the mixture. Cook over low flame until the mixture thickens. Put salt and pepper to taste and serve warm.
